Criollo Beef - One Whole Animal - deposit
Buying a Whole of Criollo beef gets you ALL the delicious steaks, roasts and other cuts you love, cut to the thickness and size YOU want--at a price you'll love just as much! And remember--there are no unknowns with our Criollo beef: we DNA test all of our Criollos, when they are calves, to measure their meat's Tenderness and Marbling. These scores are on a scale of 1 to 10. Tenderness scores of 4-6 predict a "pleasant dining experience," and scores of 7 and higher--the coveted "Elite" status--predict fork-tender yumminess. Marbling scores of 4-6 predict a grade of "Choice", with scores of 7 and higher predicting a grade of "Prime." Only Criollos with Tenderness scores of 7 or higher, and Marbling scores of 4 or higher, are used in our meat program. Can you imagine, your freezer containing 9-10 cubic feet of dry-aged, flavorful, fork-tender beef?
Your Criollo Whole will be custom-cut to YOUR individual specifications and preferences (don’t worry! We’ll provide you a Cut Instruction Sheet and walk you through it!) We pay the processor’s fees, a $2.32/lb Dressed Weight value.
Our Criollo Wholes are priced at $6.25/lb Dressed Weight. "Dressed weight" is the weight of the side of beef after harvest: our USDA-certified processor has a certified scale, conducts the weighing immediately after harvest, records the weights, and provides a cut sheet detailing the exact Dressed Weight of EVERY side of Criollo beef they process.
Our Criollo Wholes average 450 to 500 lbs Dressed Weight, although each individual Whole will vary slightly in weight.
Depending on how you choose for your Whole of Criollo beef to be processed, the expected yield of vacuum-packed retail cuts of Criollo beef will vary from 60% to 70% of the Dressed Weight, plus the organ meats and select soup bones. About half of the retail cuts will be steaks/roasts/etc., and about half will be ground product. And, you can have the two Sides of your Criollo Whole processed differently from each other at no extra charge!
A deposit of $800 reserves your Whole; as mentioned above, you will be provided with an ACBA Cut Instructions Sheet to fill out, so that your Whole of delicious Criollo beef can be custom-cut to your exact specifications. Our 2024 harvest season starts June 2024, and concludes in late August 2024. Get your deposit in early, as our Sides and Wholes sell out early.
The exact cost of your Whole of Criollo beef will be determined by the Dressed Weight; once that is known, the deposit will be subtracted from your final invoice, and the balance will be due upon shipping, or pick-up at the Jandal Ranch. You will also be provided a copy of the Processor’s Cut Sheet, which shows the Harvest Weight and details the cut yield.
The beef from your Criollo Whole will be packaged as with all our Criollo beef: all retail cuts are vacuum-packed in heavy mil plastic bags, with custom-printed labels clearly identifying the cut. All ground beef is vacuum-packed in 1 lb chubs in heavy mil plastic. All hamburger patties are vacuum-packed, with dividers, in heavy mil plastic bags. Select soup bones are packed in 3-5 lb bags.
Your Whole of Criollo beef will dry-age 1-2 weeks prior to processing; the individual cuts will be flash-frozen as soon as they are cut and vacuum-wrapped. Criollo Wholes are available for pickup from the Jandal Ranch or shipping about 3 weeks after Harvest Day. Due to uncertainty of prompt delivery in the UPS & Fedex systems, we will not ship sides or wholes to areas requiring more than 2 days in the shipping system.
Criollo Wholes include the organ meats as well as the select soup bones.

For example, if your Whole of Criollo beef has a dressed weight of 450 lbs, you can expect to receive about 150-170 lbs of steaks, roasts, ribs, etc., and about 150-170 lbs of ground product. In addition, each Whole of Criollo beef will yield around 7 lbs of liver, the heart, the tongue, the oxtail and around 4-5 bags of select soup bones.

Your Criollo Beef order is delivered to your door in perfect condition. We use plenty of dry ice and a reusable, insulated cooler - a packaging combination that will insure your products arrive frozen and in excellent condition. We ship via FEDEX on Mondays. Our shipping charges for 1 and 2 day deliveries (tan and light tan areas on the map) is $10.00.
In delivery areas requiring 3 or 4 days in the FEDEX system (green and brown areas on the map) : to insure your Criollo Beef order arrives in perfect condition, we must add additional dry ice, and usually a larger shipping container to hold the extra dry ice. Due to the additional dry ice and larger container needed, shipments requiring 3 or 4 days in the FEDEX system will require an additional $25.00 in shipping fees. If you live in the 3 or 4 day FEDEX delivery area (based on delivery zip code), your shipping charges will be increased by $25.00 (from $10.00 to $35.00). You will see this additional $25.00 (if applicable) added for the final order verification.UNFORTUNATELY, WE CANNOT SHIP TO AREAS REQUIRING 5 DAYS DELIVERY, (PUERTO RICO and 2 SMALL AREAS IN NEVADA - ORANGE ON THE MAP), NOR TO HAWAII OR ALASKA.
